Roasted Chinese Turkey

In 10-12 quart saucepan, over high heat, combine water, soy sauce, sherry or soda, ginger, onions, sugar, salt and pepper; bring to a boil. Carefully place turkey parts in soy sauce mixture and return to a boil. Reduce heat; cover and simmer mixture 30 minutes. Remove turkey parts from saucepan and place in a 12 x 16 x 2-inch roasting pan. Ad 2 cups of soy sauce mixture to pan. Bake, uncovered, in 350 degrees F. oven for 1 hour. Baste turkey parts every 10 minutes with pan juices. Increase oven temperature to 450 degrees F. Brush turkey parts with vegetable oil and bake 5-10 minutes or until outside of turkey is deep brown. To serve, slice turkey meat from bones. Good served hot or cold.
